Great wings are a two-stage cook: indirect heat to render, direct heat to crisp. Sauce goes on at the very end so the sugars never scorch.

- 1/3 cup Jax Cask and Flame Bourbon BBQ Sauce
- Neutral oil
Instructions
- 01
Pat the wings completely dry and toss with oil and both blends.
- 02
Set the grill for two zones and cook indirect for 20 minutes, turning once.

- 04
Brush with BBQ sauce in the final two minutes.

Cooking tips
- — Dry skin is the whole game — rest seasoned wings uncovered in the fridge if you have time.
- — Sauce late. Sugar burns fast over direct heat.
